Grilled Beet Salad with Corn Salsa & Grilled Peaches & Plums with Whipped Cream

Ingredients:
3-4 Whole Beets cleaned and peeled
Four handfuls of Locally Grown Mesclun Greens
6 oz. of Extra Virgin Olive Oil
4 Corn on the Cobb - keep corn in the husks
4 slightly under ripen tomatoes, cored and sliced into 1/4 inch wide whole wheels
1 bunch of Cilantro
2 small red onions
1 small mild hot pepper
2 oz of red wine vinegar
Kosher Salt and Pepper to taste

Directions:

To peel beets - while whole place in roasting pan and season with salt and pepper - place in 375 degree oven for about 25 minutes -let the beets cool for about 15 minutes and skin should peel off easily.


Slice beets into 1/4 inch thick wheels and refrigerate until cold
Place Corn still in husks on hot grill (250 degrees) for about 10 minutes
When corn is almost done - place tomatoes tomatoes on grill for about 1 minute on each side
Chop cilantro into fine julienne
Finely Dice Red onion and hot pepper
Remove tomatoes from grill and dice
Remove corn from grill, husk and slice corn off cobb
Mix Corn, tomatoes, cilantro, onions and peppers with 1.5 oz. of Red Wine Vinegar and 3 oz. Extra Virgin Olive oil
Season with Salt and Pepper


Drizzle remaining olive oil onto beets and coat
Grill beets for about 2 minutes on each side - remove from grill when just tender


Plate your greens, layer beets over greens and heap some salsa in the middle of greens - serve - no reason to add any other dressing.

Grilled Peaches and Plums with Fresh Made Whipped Cream

Ingredients:


5 ripe Peaches and Plums
Pint of Heavy Whipping Cream
2 Table spoons of sugar
Teaspoon of Vanilla

Directions:


Wash and Clean Peaches and Plum and refrigerate until cold
Slice into 1/4 inch pieces and remove seed from fruit
Place cold fruit onto hot grill and grill for a minute, turn fruit Quarter turn
(you only need to grill the fruit on one side)
When fruit is beginning to caramelize and is tender - remove from grill

Whip cold cream with sugar and vanilla - by hand with a whisk will take a few minutes; or in a blender - which will take a few seconds

Place fruit in a bowl and spoon cream over the fruit.

Eat and savor the richness of the season!
