Gingered Sweet Pea Burgers with Honey Roast Carrot Bacon

Serving Size: 6 Burgers

Sweet Pea Burgers

Ingredients:

1 Tblsp. Chopped Ginger

1 Cup Diced Onions

1 Diced & Seeded Red Jalapeno

2 Tsp. Salt

2 Tsp. Pepper

1 Tsp. Garlic (sliced)

½ Tsp. Turmeric

4 Cups Green Peas

2 Eggs

¾ Cup Flour

2 Tblsp. Butter

Directions:

Sauté ginger, onion, red jalapeno, salt, pepper, garlic and turmeric in butter until soft. In food processor, chop green peas. Add peas to onion mixture then combine with eggs and flour. Mix well. Cover and chill. Shape into patties. Cook in a non-stick pan with a little olive oil. Flipping when lightly browned.

Carrot Bacon

Ingredients:

1 Large Carrot

1 Tblsp. Honey

1 Tblsp. Rice Vinegar

1 Tsp. Salt

1 Tsp. Pepper

1 Tsp. Molasses

6 Brioche Buns

Directions:

Peel carrot and slice in half widthwise. Cut into (12) 1/8 inch slices. Toss with honey, rice vinegar, salt, pepper, and molasses. Place on a lightly oiled pan. Bake for 18-20 minutes at 350 degree. Reserve warm.

Place sweet pea patty on bun with (2) slices of carrot bacon.
