Chef Andy's Huevos Rancheros Locos

Ingredients:

2 cups Goya Masarepa

1 tsp. salt

3 cups warm water

1 ¼ Queso Blanco (shredded)

Directions:

1. In a bowl, combine Masarepa, salt, warm water. Let stand for 5 minutes then mix and add queso blanco to form dough.

2. Form the dough into patties ½ inch thick.

3. Coat the skillet with butter. On medium heat, cook arepas until lightly browned on each side.

4.Serve with desired accompaniments.       

Queso Blanco

Ingredients:

3 cups of Queso Blanco (shredded)

Chorizo

1 chorizo finely diced

Fried Egg

1 large size egg

Aji Sauce (Colombian Spicy Salsa)

2 tablespoon fresh lime juice

2 ½ tablespoon white vinegar

2 tablespoon water

¼ cup green onion, finely minced

¼ cup fresh cilantro, minced

2 jalapeno pepper, finely minced

2 teaspoon tomato, finely chopped

1 teaspoon black pepper

½ teaspoon salt

Directions:

1.  Combine all ingredients together and chill for 1 hour before serving.
