Blackfish N' Chip

Recipe Provided By Chef Chip Roman: Blackfish

Ingredients:

Fresh white fish cut in finger size (halibut or cod is great)
Canola oil for frying
Sea Salt

Tempura mix:

1cup ap flour
2 cup cornstarch
1 cup roasted barely flour
3 cups sparkling water
1/2 cup ice cubes

Directions:

Sift all flours together
Add club soda and mix
Mixture will be thick
Add ice cubes and allow batter to rest and the ice to melt
Remix after 20 minutes and batter should be cold and ready
If you like a thinner crust a few more drops of water are ok
Season fish with salt
Place in batter
When fully coated place gently in oil
Fry at 350 for 4 minutes or until done
Reseason with salt and serve with fries or potato salad and lemon wedges
