Low-Fat Mango Tiramisu, Heart Romain Salad, Watermelon Breakfast A Go Go

Low-Fat Mango Tiramisu

Ingredients:

  • Coffee Kahlúa Dip Mixture
  • 1 cup coffee (regular or decaffeinated)
  • 1/3 cup Kahlúa
  • 2 Tbsp. Condenses Sweetened Milk
  • 6 pieces Lady Fingers
  • 1 large mango, puréed
  • 1 cup low fat yogurt
  • ½ cup confectionery sugar
  • 1 Tbsp chocolate powder
  • ½ tsp. chocolate syrup
  • 4 pieces of strawberry heart
  • 2 cocktail toothpicks

Directions:

  1. Break two lady fingers into half then dip into coffee/Kahlúa mixture for only a few seconds.
  2. Place in the center of the martini glass
  3. Pour ½ of the mango  mixture on the top of the lady finger
  4. Sprinkle the chocolate powder on the top of the mango mixture
  5. Place a whole lady finger on the side with chocolate syrup
  6. Decorate with two strawberry hearts on the rim on the martini glass.
  7. Enjoy!

Watermelon Breakfast A Go Go

Ingredients

  • 1/2 cup        Low-fat Granola
  • ¾ cup        Watermelon, cut into small chunks and de-seeded
  • 5 oz.        Low-fat banana yogurt
  • Optional, for garnish:
  • Banana
  • Toasted almonds
  • Coconut


Directions:

  1. In a large, cylindrical glass or “to go” container, create a parfait by layering ingredients in this order: granola, watermelon, and yogurt.
  2. Repeat.
  3. Garnish with a slice of banana, toasted almonds or coconut and chunks of watermelon.

Heart Romaine Salad

Ingredients:

  • 1 pc Romaine lettuce heart
  • Olive oil
  • Oyster sauce
  • Dijon mustard

Procedure:

  1. Pour a tbsp of olive oil into boiling water
  2. Place Romaine Heart into boiling water for 5 seconds. Lettuce is still crispy.
  3. Drain the water.  Put on a plate as the Romaine Heart is shining because of olive oil
  4. Drizzle with oyster sauce
  5. Add Dijon Mustard


Serving idea:  Serve with a bowl of rice or noodles for a simple meal.
