Northern Liberties Taqueria to Be Converted Into Pop-Up Incubator-Style Restaurant

A taqueria in Northern Liberties will be converted into an incubator-type restaurant, showcasing dishes from emerging chefs.

Chef Nick Farina, owner of Verdad Restaurant & Tequila Bar in Bryn Mawr, Pennsylvania, will convert his Union Taco restaurant at 712 W. Girard Ave. into EAT, a 25-seat pop-up restaurant with changing themes and menus.

The purpose of the transformation is to highlight the cooks and culinary talent behind the scenes in some of the city's top restaurants. The restaurant will feature dishes from local sous chefs, line cooks and even food truck entrepreneurs.
