High-End Steakhouse Expanding in Philadelphia, But is the City Reaching a Point of Saturation?

A Kansas-based upscale steakhouse focused on Midwestern cuisine is looking to expand into the Philadelphia market.

Traffic at fine-dining restaurants across the country with a check average of $40 has increased 11 percent in the last three years, according to NPD Group, and J. Gilbert's Wood-fired Steaks & Seafood is looking get a slice of the market by opening up to two franchised locations in the Philadelphia region within three years.

"[We look for] any area with sustained growth or current growth," said Warren Lane, national director of franchise and development. "Philadelphia's … growth has been slow and steady. Unemployment is down and income seems high compared to the national average."
